Monday and Part of Tuesday

Ok, just a quick run down of what I ate yesterday and today, so far:

Monday -

Breakfast – 1/2 c. raw steel cut oats, ground in coffee grinder, 6 dates soaked in hot water, 1/4 c. dry shredded, unsweetened coconut, handful of almonds, chopped, dash of vanilla, sprinkle of salt, packet of stevia, 2 Tbl. golden flax seeds, ground in coffee grinder. Combined all in a bowl, added a little additional hot tap water for desired consistency.

Lunch – Green Smoothie – 1 c. orange juice, handful of raw spinach leaves,  1/2 banana, 1 c. frozen peaches, vanilla, stevia.

Dinner – Sante Fe Corn Salad – 2 c. frozen organic white corn kernels-thawed, 1/2 red bell pepper-diced, 1 avocado-diced, slice sweet white onion-minced, drizzle olive oil, cumin, garlic salt, onion pdr. fresh ground black pepper.

Late night snack – 2 glasses red wine & last 2 slices apple coffee cake <errr…night time is my downfall!>

Tuesday – So Far:

Breakfast – big mug of green tea, Apple/Banana/Almond “cereal” with salt, vanilla & stevia

Lunch – 1 stalk celery filled with left-over walnut “taco meat”

I’ll try to update later tonight. I have been thinking about teaching gourmet raw food preparation classes locally. I really love “cooking” this way!

I really need to update here!

Hi Everyone,

Well, it’s been 11 days now since I last wrote in this blog. It’s not that I haven’t been writing…I have just been posting on a raw food forum and forgot to update here, too! Feel free to check out that blog at: http://www.rawfoodtalk.com/blogs/blog-12189/

Anyhow, I have been primarily raw…but continue to cave on little items here and there. I am not going to give myself too much grief over that, though, because I am doing EVER so much better than I used to, with regard to what I am putting into my body. I would have to say that I am probably 90% raw, at this point. Almost everything I eat is raw…with the occassional exception.

However, I realized tonight how passionately I believe in what the Raw Foods lifestyle can do for people. Well, actually, it wasn’t just tonight. I have become an evangelist, of sorts, for Raw Foods. Whenever I meet someone and they tell me about their own health problems or the health problems of someone they love, I immediately tell them they should go raw! So, I have to ask myself…if I believe so fervently in this way of living…why do I have such a hard time fully comitting to it, myself?

Food Addictions! I KNOW in my heart and mind that this is the most logical path to ultimate health and wellness…but my mouth is so tempted sometimes, that it makes it difficult to stay on the straight and narrow path. What that means is recomitting every single day, until I have broken my addictions permanently. Which I generally do DO, but sometimes it isn’t until AFTER I have given into the temptation before me! This is the wrong order to do it in! I need to recomitt BEFORE I put that piece of coffee cake in my mouth! Because I know that once I take a single bite, it’s over and I have to eat a whole piece! And then, not 15 minutes later, I am forced to deal with the results in my body. My stomach, specifically. The bloat…oh, the bloat! LOL! It sounds funny, but it really is very uncomfortable!

Anyhow, if you have this same challenge, then I suggest you try the same thing, and recomitt BEFORE you take that first bite.

Here is what I ate today:

For breakfast I ate some leftover raw carob pudding:

2 avocados, 6 dates – soaked, 4 Tbl. carob, 2 tsp. vanilla, 2 packets Stevia (natural, no-cal, no-carb sweetener). Blend till smooth and creamy. Yum! (This is even better with cocoa! But make sure it’s the raw kind!) (This is for a FULL recipe! It makes quite a lot and I only ate about a cupful for breakfast this morning…just what was left over from yesterday.)

Green Smoothie:

1 cup orange juice, large handful raw spinach, 1 banana, about 2 cups frozen peach slices, 1 tsp. vanilla, 1 pkt. Stevia. Blend.

Tossed Salad: organic wild greens, raw spinach, red bell pepper slices, black olives, minced fresh garlic, shredded carrot, oil & vinegar dressing (Paul Newman’s)

A little basmati rice (cooked) A slice of homemade apple coffee cake (cooked) Couple glasses red wine. 3 dates.

Well, Fall is definitely in the air. It’s getting cooler and I am craving warm, comfort foods! I was actually tempted to make a big pot of soup and home made bread today, but I withstood! Instead I made a yummy, Raw version of Peach Cobbler. Recipe to follow.

It’s been a nice Raw Foods day today. Here is what I have eaten:

Breakfast -

1/2 small canteloupe

1 lg. mug Mate herb tea

Lunch -

Guacamole Salad

1/2 lg. avocado, diced

1 roma tomato, diced

1 slice red onion, minced

1/4 lg. lime, juiced

Salt and fresh ground black pepper to taste. Deluxe!

Snack -

Raw Peach Cobbler

2 medium peaches, peeled, pitted and sliced

2 handfuls pecan halves, chopped

Agave Nectar, to taste

Cinnamon, to taste

2 packets powdered Stevia

1 tsp. vanilla extract

Salt, to taste

Put peach slices in bowl. Drizzle with Agave Nectar and add vanilla. Stir well and leave to sit. Put chopped pecans in a bowl. Sprinkle with both packets of Stevia, cinnamon and salt. Stir to combine. Pour nut mixture on top of the peaches and stir well. Eat! Yum!

I haven’t had dinner yet…not sure what I will have yet. I will write more later.
